Delicious Italian Bruschetta Recipe

Pronounced broo-sket-ta, it is another preparation of Italian cuisine that has been adopted and modified the world over. In its basic form, it is a slice of grilled Italian bread, rubbed with garlic, sprinkled with salt and pepper and drizzled with olive oil. The bread was traditionally roasted on a brustolina grill. It is a wonderful accompaniment for red wine, as it brings out its flavor. These days the term bruschetta has come to signify garlic toast topped with diced tomatoes.

Ingredients:

  1. 1 loaf crusty baguette
  2. 8 medium tomatoes, diced
  3. ½ red onion, diced
  4. 3 garlic cloves, minced
  5. ¼ cup of fresh basil, chiffonade
  6. ½ cup balsamic vinegar
  7. ½ cup extra virgin olive oil
  8. Salt and pepper to taste
  9. Honey to taste

Instructions:

  1. Slice the baguette into inch thick slices. Slice on the bias.
  2. Mix the tomatoes, onion, garlic, and basil together in a bowl.
  3. Add the balsamic vinegar, extra virgin olive oil.
  4. Taste and add salt and pepper.
  5. Add honey to taste.
  6. Cover and let rest in the refrigerator for at least one hour.
  7. Before serving toast the bread slices, serve the chilled topping on the warm bread.
