This is the staple salad I take to all potlucks that require a pasta salad. The dressing is also a fantastic greek dressing on its own.
Ingredients:
- 1 cucumber (chopped)
- 1 small red onion (chopped)
- 2 Cups halved grape tomatoes
- .5 Cup quarterd Kalamata olives
- .25 Cup White wine vinegar
- 2/3 Cup Olive oil
- 2 tablespoons dijon mustard
- 1 clove minced garlic
- 1 teaspoon parsley
- 1 teaspoon oregano
- 1 cup crumbled feta cheese
- 12 ounces of penne pasta
Directions:
- Cook pasta and cool.
- Chop vegetables.
- Mix vinegar, olive oil, dijon mustard, garlic, parsley, and oregano. Pour over cooled pasta. Add chopped vegetables and feta cheese and toss.
