- Whole Wheat Flour, 1 cup
- Baking Soda, 1/4 tsp
- Brown Sugar, 2 tbsp
- Cinnamon, 1 tsp
- Canola Oil, 2 tsp
- Buttermilk, lowfat, 1.25 cup
Directions
Mix ingredients well to make a smooth, thick batter. Let the batter sit for 10 minutes. Spray a non-stick frying pan with cooking spray and heat over medium heat. When the pan is warm, use a ladle to pour pancakes. Cook them over medium heat until the edges appear dry and bubbles are breaking the surface of the pancake (about 3 minutes). Flip pancakes and cook for another 1-2 minutes. Serve warm with syrup, honey, fruit, etc.
